Ingredients
- Chicken fillet - 2 lbs
- Pumpkin - 14.1 oz
- Morels - 10.6 oz
- Onion - 1 head
- Sour Cream - 7.1 oz
- Meyer Lemon Juice - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the pumpkin into cubes about 1–1.5 cm on each side.
Step 2
Quarter the mushrooms.
Step 3
Finely chop the onion.
Step 4
Cut the fillet into medium pieces.
Step 5
Fry the chicken in several batches over high heat in vegetable oil, about 3 minutes per batch. Transfer to a plate.
Step 6
In the same skillet, sauté the onion for about 2–3 minutes.
Step 7
Add the mushrooms and pumpkin, and sauté, stirring, for 10 minutes.
Step 8
Add the lemon juice, chicken, and sour cream. Season with salt and pepper to taste.
Step 9
Bring to a boil, reduce the heat, and simmer until the pumpkin is soft, about 10–15 minutes. Before serving, sprinkle the dish with finely chopped dill.
