Description

If you steam this dish, it will be even healthier and juicier. You can also roll the fillets into roulades, just make sure to put the cream inside. Secure with toothpicks or skewers and bake in the oven. Alternatively, you can cut the breasts into 'cubes', fry them in oil, then pour in the cream and fry again (that's what I did with what wouldn't fit on the baking sheet). You can replace spinach with sorrel, as it is more familiar and nutritious.

Ingredients

  • Chicken fillet - 4 pieces
  • Frozen spinach discs - 8.8 oz
  • Feta cheese - 3.5 oz
  • Salt - to taste
  • Vegetable Oil - 3 tablespoons
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Rinse the chicken fillet thoroughly and trim off any unwanted parts (tendons, leftover bones).

Step 2

Pound the fillet with a meat mallet or the blunt side of a knife (whatever works for you), pounding it hard so that the pieces become thin, as we won't have the opportunity to flip our future dinner in the oven.

Step 3

While you are pounding the poor chicken, you could preheat the oven to 180°C (356°F).

Step 4

Also, thaw the spinach (if you didn't buy fresh). I did this in a couple of minutes in the microwave.

Step 5

If you have already pounded the chicken, it's time to take out the baking sheet, lightly grease it with oil (or just line it with foil), and place the thinly flattened breasts on it.

Step 6

While the baking sheet waits for its turn and the oven heats up, you can start making the feta-spinach cream.

Step 7

Place the required amount of feta (100-150 g) in a relatively deep bowl, add a couple of tablespoons of vegetable oil, and start vigorously whipping. I did this with a fork. Whip until the mixture turns into something resembling thick sour cream. If this doesn't work (the feta is still in clumps), add more oil and keep mixing and whipping. I hesitated to salt the cream since the feta is already salty, but you can give it a try.

Step 8

You have successfully whipped the feta into a creamy consistency, now it's time to add the spinach. This is straightforward—just add and mix.

Step 9

Now you can salt and pepper the meat waiting on the baking sheet. Alternatively, you could have done this a little earlier.

Step 10

The final stage of preparation. Spread the feta-spinach cream on the fillets in a layer about 2 mm thick.

Step 11

Put all this beauty in the oven for about 40 minutes.
