Chicken with Vegetables in Sweet and Sour Sauce
Ingredients
- Chicken Drumstick - 14 pieces
- Canned Pineapple Chunks - 14.1 oz
- Onion - 1 piece
- Turnips - 3 pieces
- Tomatoes - 4 pieces
- Orange Bell Peppers - 2 pieces
- Garlic - 2 cloves
- Honey - 1 tablespoon
- Soy Sauce - 2 tablespoons
- Dijon Mustard - 1½ tablespoons
- Olive Oil - 7 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and wash the carrots, bell pepper, and onion. Remove the skin from the tomatoes.
Step 2
Wash the chicken drumsticks, pat dry, season with salt, and fry on all sides until golden brown in olive oil.
Step 3
Cut the carrots into strips, the bell pepper and onion into half rings, and the pineapple into cubes. Cut the tomatoes into large wedges.
Step 4
Place the chicken drumsticks in a baking dish and sprinkle with crushed garlic.
Step 5
Sauté the carrots in olive oil for about 7 minutes, then add the onion, tomatoes, and bell pepper, and simmer for another 7 minutes. Add the pineapple, soy sauce, mustard, and honey. Season with salt and pepper, and simmer for another 10 minutes.
Step 6
Place the cooked vegetables on top of the chicken drumsticks and bake in the oven at 200–410°F for about 30 minutes.
