Step by Step guide
Step 1
For the recipe, the chickpeas need to be soaked for about 8 hours, but it's better to soak them for a full day in the refrigerator. Nothing will happen to them; they can sit peacefully.
Step 2
Now the chickpeas need to be ground into a kind of puree. You can either pass them through a meat grinder or chop them in a blender - the choice is yours. Using a blender results in a coarser texture, but I like it because you can really feel the texture.
Step 3
Peel the onion and garlic and treat them the same way as the chickpeas.
Step 4
Now it's time to add the eggs, all the spices listed to taste, and season with salt.
Step 5
Now you can either roll the chickpea mixture into balls in advance or shape and place them directly onto the skillet. I should mention that the patties should not be thicker than one and a half centimeters to ensure they cook through. Chickpeas fry very quickly (on an electric stove set to 7, they can start to burn in just a minute). You don't need to use a lot of oil, just enough to prevent the patties from sticking. Fry on each side until golden brown, and then heat them again on each side.
Step 6
Of course, it would be great to prepare a sauce for the patties. Tzatziki would be just perfect!
