Ingredients
- Spanish onions - ½ heads
- Sweet Pepper - 1 piece
- Radish - 6 pieces
- Romaine lettuce - ½ pieces
- Cilantro - 5 sprigs
- Chard - 0.4 oz
- Fresh Mint - 3 sprigs
- Chickpea - 1 can
- Natural Yogurt - 7.1 oz
- Tahini - 2 spoons
- Meyer Lemon Juice - 0 fl oz
- Garlic - 1 clove
- Honey - 1 tablespoon
- Feta cheese - 4.2 oz
- Flaxseeds - to taste
- Toasted Sesame - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the red onion and chop it into small cubes.
Step 2
Remove the seeds and white ribs from the sweet pepper, then slice it into thin strips.
Step 3
Slice the radishes into thin rounds using a mandoline. If you don't have a mandoline, you can use a knife instead.
Step 4
Separate the romaine lettuce into leaves, wash them, and cut into strips. You can also tear the lettuce by hand.
Step 5
Tear the leaves of cilantro and mint from the stems. Tear the large mint leaves.
Step 6
Squeeze the juice from the lemon.
Step 7
For the dressing, mix together yogurt, tahini (you can substitute tahini with sesame paste), lemon juice, garlic minced or grated on a fine grater, honey, salt, and pepper.
Step 8
Place romaine lettuce at the bottom of a serving plate, and then add the rinsed chickpeas on top.
Step 9
Then arrange all the prepared vegetables and crumble the feta cheese on top with your hands.
Step 10
Drizzle the dressing over the salad, sprinkle with flaxseeds and sesame seeds, and garnish with mint, cilantro, and Swiss chard leaves.
