Chickpeas are essentially 'another meat' for vegetarians. They are meaty, buttery, with a nutty, full-bodied flavor. And they are high in protein. If you stew chickpeas with onions, you end up with a powerful dish. Don’t skimp on the Eastern spices—they won’t ruin the chickpeas. It may be a bit tricky to find a ready-made spice blend with the word 'bahara' on the label, but you can cheat a little: just take a bit of all the spices you have at home, mix them, and grind them in a coffee grinder, relying only on your nose and the desired level of spiciness. Step by Step guide
Step 1
Prepare the allspice spice blend. Combine all the spices (except for sumac), toast them in a dry skillet until fragrant, then let them cool and grind them finely in a mortar and pestle or a coffee grinder.
Step 2
Prepare the tahini sauce. Dilute the tahini paste with 50 ml of warm water, then add 30 ml of olive oil, lemon juice, and sriracha. Whisk everything together until you achieve a smooth, creamy sauce.
Step 3
Cut the onion and bell pepper into strips.
Step 4
Heat 1 tablespoon of olive oil in a deep skillet, and sauté the onion until it is soft and lightly golden.
Step 5
Add the previously boiled chickpeas and broth to the skillet. Also, add 0.5 teaspoon of allspice (seal the remaining spices in a jar for later use – for rice, potatoes, and other dishes), stir, and simmer for 20 minutes.
Step 6
Transfer the chickpeas to a plate, garnish with herbs, add tahini sauce, and sprinkle with sumac.
