Ingredients
- Chickpeas - 10.6 oz
- Tomatoes - 10.6 oz
- Onion - 1 piece
- Garlic - 4 cloves
- Tomato Paste - 3 tablespoons
- Fresh Mint - to taste
- Ground red pepper - to taste
- Basil - to taste
- Chopped Cilantro (Coriander) - to taste
Step by Step guide
Step 1
Rinse the chickpeas (previously soaked in cold water for 6 hours) and cook for 2 hours. In a saucepan, sauté the onion and tomatoes (chopped fairly finely) in oil. Add the chopped garlic when the onion and tomatoes are ready.
Step 2
In two cups of the water in which the chickpeas are cooking, dissolve the tomato paste, then add the chickpeas and the water with the paste to the saucepan. Add the mint (finely chopped), pepper, and basil.
Step 3
Add salt to taste and simmer covered for 10 minutes. When serving, sprinkle with cilantro.
