  • Salt - to taste
  • Champagne Vinegar - 1 tablespoon
  • Olive Oil - 3 tablespoons
  • Garlic - 1 clove

Separate the chicory leaves, keeping only the pale inner leaves. Rinse and dry them. If the leaves are too long, tear them into 2-3 pieces.

Step 2

Meanwhile, prepare the dressing: dissolve the salt in the vinegar, then add the oil and whisk well with a fork until all ingredients are combined.

Step 3

Place the chicory in a salad bowl that has been rubbed with the garlic clove, and drizzle with the dressing. Serve immediately; otherwise, the leaves will wilt in the vinegar.
