Description

An important achievement of Mexican-Texan cuisine. Here, beans are combined with ground beef and a plethora of vibrant spices. The spice mix and their heat can be adjusted if this version seems unsuitable for your taste.

Ingredients

  • Lean Beef - 15.9 oz
  • Olive Oil - 5 fl oz
  • Star anise - 3 pieces
  • Onion - 7.1 oz
  • Carrot - 3.5 oz
  • Mild Chili Spice - 1.8 oz
  • Garlic - 0.7 oz
  • Butter - 5.3 oz
  • Black Cumin (Cumin) - a pinch
  • Smoked salt - 0.2 oz
  • Mild Chili Spice - to taste
  • Tomatoes - 7.1 oz
  • Passata Tomato Sauce - 5.3 oz
  • Ketchup - 1.8 oz
  • Worcestershire Sauce - to taste
  • Red Grape Juice - 12 fl oz
  • Campbell's Beef Broth - 17 fl oz
  • Red Canned Beans - 14.1 oz
  • Cilantro - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Rice - 14.8 oz

Step by Step guide

Prepare all the ingredients.

In a heavy-bottomed pot, heat olive oil and sauté the ground beef with star anise. Transfer the cooked beef to a clean bowl.

Dice the onion and carrot into small cubes.

Dice the chili into similar-sized cubes.

Chop the garlic.

In the same pot, heat the butter and sauté the onion and carrot until the onion is golden. Add the chili and garlic, and stir-fry for another minute.

In a dry skillet, toast the cumin with smoked paprika and chili until fragrant.

Transfer the spices to the pot with the vegetables, add finely chopped tomatoes, tomato paste, ketchup, and a few drops of Worcestershire sauce. Sauté, stirring, for 5–7 minutes.

Add the wine and simmer for 10–15 minutes, stirring constantly.

Add the browned ground meat, pour in the beef broth, and simmer on low heat for 2 to 2.5 hours.

Finally, add the beans, season with salt and pepper, bring to a boil, and simmer for another 2 minutes.
