Chili Con Carne with Cheese

Ingredients

  • Beans - 8.8 oz
  • Lean Beef - 21.2 oz
  • Tomatoes - 14.1 oz
  • Spanish onions - 5.3 oz
  • Orange Bell Peppers - 1 piece
  • Garlic - 3 cloves
  • Mild Chili Spice - 3 pieces
  • Water - 5 fl oz
  • Sugar - 2 teaspoons
  • Salt - 1 teaspoon
  • Cilantro - 1 teaspoon
  • Oregano - 2 teaspoons
  • Ground Cumin - 1 teaspoon
  • Lime Juice - 2 tablespoons
  • Olive Oil - 3 tablespoons
  • Liquid dark chocolate - 0.7 oz
  • Hard Cheese - 4.2 oz

Step by Step guide

Step 1

Soak the beans in cold water for 6-8 hours, then rinse and drain. Cook the beans until almost done, about 80 minutes.

Step 10

Cook covered for about 70-80 minutes on low heat with a gentle simmer, stirring occasionally.

Step 11

5 minutes before it's done, add the chocolate and mix.

Serve with grated cheese.

Sauté the ground beef in olive oil until the liquid evaporates and it is lightly browned (10-15 minutes). Then transfer to a deep pot where the chili will be cooked.

Chop the onion (into quarter rings), bell pepper (into pieces about 1 cm), chili pepper (1 piece finely chopped after removing seeds), and garlic finely.

Step 4

Mix all the spices in a mortar and grind them slightly.

Step 5

Start by sautéing the onion until translucent, then add the other vegetables (bell pepper, chopped chili pepper, garlic) and sauté, stirring constantly for about 5 minutes. Then add the spices and sauté for another 2-3 minutes. Transfer the vegetables to the meat.

Peel the tomatoes (pour boiling water over them for a minute). Blend the tomatoes and add them to the pot.

Step 7

We have 2 chili peppers left; cut one in half and remove the seeds, add it to the pot, and leave the other one whole.

Step 8

Add sugar and salt, gently mix everything and turn on medium heat, simmer for 5-7 minutes. Taste for salt (add a little if needed).

Step 9

Then add the pre-cooked beans to the pot, mix, add water (adjust for consistency, it should be moderately liquid). Add the squeezed lime juice.
