  • Carrots - 15.9 oz
  • Extra virgin olive oil - 2 tablespoons
  • Lemon Juice - 1 tablespoon
  • Grated Lemon Zest - 1 tablespoon
  • Grated Ginger - 1 teaspoon
  • Chopped Cilantro - 2 teaspoons
  • Tahini - 2 teaspoons
  • Salt - to taste

Place a pot of salted water on the stove and bring it to a boil.

While the water is boiling, fill a large bowl with ice water.

Add the carrots to the boiling water and cook for about 3 minutes.

Then place the pot with the carrots into the ice water to cool them down.
