Chinese Soy Sprout Salad
Ingredients
- Peanut Sprouts - 8.1 oz
- Red Long Chili Peppers - 1 piece
- Courgette - 1 piece
- Onion - 2 pieces
- Cress salad - 2.3 oz
- Olive Oil - 6 fl oz
- Ginger - ½ teaspoon
- Red Wine Vinegar - 2 fl oz
- Soy Sauce - 2 tablespoons
- Celery stalk - 1 piece
- Passata Tomato Sauce - 2 teaspoons
- Salt - to taste
- Meyer Lemon Juice - 2 teaspoons
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a large bowl, mix the soy sprouts, chopped pepper, cucumber pieces, and onion rings. Add the cress leaves. Cover with plastic wrap and refrigerate.
Step 2
Place all the dressing ingredients in a blender, add 50-60 ml of water, and blend.
Step 3
Serve the salad and dressing separately so everyone can dress the salad to their taste.
