Chinese-style Chicken with Eggplant

Ingredients

  • Eggplants - 31.7 oz
  • Chicken fillet - 28.2 oz
  • Soy Sauce - 2 fl oz
  • Red Wine Vinegar - 2 fl oz
  • Sugar - 3 spoons
  • Toasted Sesame - 1 tablespoon
  • Potato protein - 1 tablespoon
  • Garlic - 1 clove
  • Red Long Chili Peppers - a pinch
  • Grated Ginger Root - 1 tablespoon

Step by Step guide

Step 1

Cut the chicken into long strips about 1 cm wide.

Step 2

Cut the eggplants into long strips.

Step 3

In several batches, sauté the chicken in vegetable oil over high heat until the meat is no longer pink inside.

Step 4

Transfer to a plate and set aside.

Step 5

Add the eggplants to the skillet where the chicken was cooked, along with ginger, garlic, and 60 ml of water. Bring to a boil, then reduce the heat to medium, cover the skillet, and sauté, stirring occasionally, until the liquid evaporates and the eggplants are tender.

Step 6

Fry the eggplants. In a separate bowl, mix together soy sauce, vinegar, sesame seeds, starch, pepper, and sugar.

Step 7

Place the chicken in the skillet with the eggplants, pour in the soy sauce mixture, and bring to a boil over high heat. Then reduce the heat and cook, stirring, until the sauce thickens.

Step 8

The finished dish is best served with rice.
