Ingredients
- Star anise - 1 piece
- Ciabatta - 2 pieces
- Pork Skewers - 4 pieces
- Dried Chili Pepper - 2 pieces
- Honey - 3 tablespoons
- Cinnamon - 1 teaspoon
- Ground clove - 3 pieces
- Nutmeg - 1⅕ teaspoons
- Red Wine Vinegar - 2 tablespoons
- Soy Sauce - 2 tablespoons
- Tomatoes - 3 pieces
- Basil - 3 stems
- Garlic - to taste
- Olive Oil - to taste
- Ground Black Pepper - to taste
- Parsley - to taste
- Spanish onions - to taste
Step by Step guide
Step 1
Prepare the marinade: in a mortar, grind the cloves, chili, star anise, add cinnamon, nutmeg, honey, vinegar, and soy sauce.
Step 2
Wash the pork, pat it dry with a paper towel, and generously coat it with the marinade. Cover the dish with plastic wrap and refrigerate for at least 1 hour.
Step 3
Once the steaks are marinated, heat a grill pan. Sear the pork on each side for 3–4 minutes.
Step 4
While the meat is cooking, slice the tomatoes into half-moons, separate the basil leaves from the stems (the stems are not needed), and tear them by hand; small leaves can be added whole. Mince the garlic, finely chop the parsley, and slice the onion into half-moons. Mix everything together, add pepper, and let it sit for a few minutes so the tomatoes release their juice and the herbs share their wonderful aromas.
Step 5
Remove the meat from the heat. Let it rest for about five minutes. Meanwhile, slice the ciabattas lengthwise and grill them on both sides until they have characteristic grill marks.
Step 6
Assemble the dish: drizzle olive oil over the ciabatta, place a piece of meat on top, add the tomatoes with herbs on the meat, and cover with the second piece of ciabatta.
