Ingredients
- Eggplants - 4 pieces
- Peanut Sprouts - 5.3 oz
- Potato - 1 piece
- Celery stalk - 4 pieces
- Shrimp - 17.6 oz
- Soy Sauce - 4 tablespoons
- Oyster Mushrooms - 3 tablespoons
- Sesame Oil - 2 tablespoons
- Ground ancho chili pepper - 5 pieces
- Fish Oil - 4 tablespoons
Step by Step guide
Step 1
Cut the eggplants and tomato into cubes, slice the carrot into half-rings, and cut the celery into thin short strips.
Step 2
Finely chop the chili peppers (you can reduce the amount by half if you're concerned it will be too spicy).
Step 3
Heat sesame oil in a wok and sauté the chili peppers.
Step 4
Add the vegetables to the wok and simmer for 10–15 minutes until softened.
Step 5
Once the vegetables start to soften, pour in the soy sauce, oyster sauce, and fish sauce. It's best to add the fish sauce gradually—by the tablespoon, mixing and tasting to avoid over-salting.
Step 6
Add the shrimp to the vegetables and simmer for 3–4 minutes.
