Description
The main feature of this classic Georgian recipe is the abundance of garlic. It's best to prepare chkmeruli not on a first date, but during lively family or friends gatherings where everyone knows each other well. Sauté a young chicken in a skillet, generously chop garlic and cilantro into a rich creamy sauce, roast sweet pumpkin as a side dish, and set out a bowl of homemade pickles. Enjoy all of this together, and then don’t be afraid to breathe on each other.

- Poultry - 1 piece
- Garlic - 10 cloves
- Dry adjika - 0.2 oz
- Vegetable Oil - 1 fl oz
- Milk - 13 fl oz
- Ground Black Pepper - to taste
- Salt - to taste

Prepare the necessary ingredients.

Cover and simmer on low heat for another 15–20 minutes. Serve.

Cut the whole chicken along the breast and open it up like a book. If there is fat in the tail area, remove it.

Coat the chicken with adjika, salt, and pepper.

In a skillet, heat vegetable oil or melt chicken fat. Place the chicken skin-side down and press it down with a weight. This can be a special press, a clean stone, or a heavy pot filled with water. Cook for 7–10 minutes until a caramelized crust forms.

Then turn the chicken over and cook under a weight for another 7–10 minutes.

Cut the roasted chicken into serving pieces by removing the backbone: drumsticks, wings with part of the breast, and the lower breast sections.

Crush the garlic using a press, add a little salt and water, and mix well. You should end up with a garlic paste.

In the same skillet, heat the garlic mixture until it becomes fragrant.

Then pour in the milk and add the pieces of chicken.
