Description
A bittersweet English classic that often appears in novels. Unlike mulled wine, which is brewed in large cauldrons in public squares, punch is a homemade drink meant for large family gatherings and quiet country parties. What's the connection to a bishop? It is believed that sweet wine for communion is somehow involved. Additionally, oranges are used—pierced with cloves and baked in the oven to infuse their caramel-citrus essence into the alcohol. It is also thought that one side effect of consuming this punch may be a softening of the heart and bouts of sentimentality, especially when sharing a cup with loved ones. Will you take the risk?
Ingredients
- Oranges - 4 pieces
- Lemon - 4 pieces
- Clove - 0.7 oz
- Water - 8 fl oz
- Cinnamon - 1 piece
- Allspice berries - 3 pieces
- Nutmeg - 1 piece
- Grated Ginger Root - 0.4 oz
- Red Grape Juice - 23 fl oz
- Sherry - 4 fl oz
- Sugar - 5.3 oz
Step by Step guide
Step 1
Stuff each orange and lemon with 8 clove buds.
Step 2
Bake the fruits in a preheated oven at 356°F for 15 minutes, until they begin to caramelize.
Step 3
Meanwhile, peel the ginger and grate it using a coarse grater. In a pot, combine water with cinnamon, the remaining clove, pepper, and ginger. Place it over heat and warm it up without bringing it to a boil.
Step 4
When the mixture is just about to boil, add the wine and sherry, and grate 1/8 of a nutmeg.
Step 5
When the mixture begins to boil again, add the sugar. Simmer on low heat for 5–10 minutes.
Step 6
Remove the cloves from the cooked fruits using tweezers.
Step 7
Gently mash the fruits to release their essential oils and juices. Add the roasted fruits to the pot and let them steep for at least 15 minutes.
Step 8
Strain the beverage through a cheesecloth and pour it into heatproof cups (or transfer it to sterilized bottles and chill for later use).
Step 9
Slice the remaining oranges into rounds and use them to garnish the cups. Grate a little more nutmeg on top of the punch. Serve warm.
