Christmas Carbonara
Ingredients
- Green Tagliatelle Pasta - 8.8 oz
- Pickled Chanterelles - 5.3 oz
- Garlic - 1 clove
- Olive Oil - 1 tablespoon
- Egg white - 2 pieces
- Sour Cream - 3.5 oz
- Parmesan Cheese - 2.1 oz
- Chopped Sage Leaves - 1 tablespoon
- Smoked Ham on the Bone - 2.8 oz
- Chopped Sage Leaves - 1 tablespoon
Step by Step guide
Step 1
Cook the tagliatelle in a large pot of boiling salted water until al dente, following the package instructions. For 250 grams of pasta, I used 3 liters of water, and the pasta cooked for about 5 minutes.
Step 2
Meanwhile, sauté the mushrooms with garlic in olive oil over medium heat for 5 minutes until softened.
Step 3
In a bowl, whisk the yolks with sour cream, grated Parmesan, finely chopped chives, and parsley. Season with salt and pepper. Add the sautéed mushrooms and thinly sliced ham. Mix well.
Step 4
Drain the water and return the pasta to the pot (save a bit of the water used for cooking the pasta!). Add the sauce to the pasta in the pot and mix. Pour in a little more pasta water to thin the sauce. Serve, sprinkled with grated Parmesan.
