Christmas Goose
Ingredients
- Goose fat - 1 piece
- Mild Chili Spice - 1 piece
- Black Cumin (Cumin) - a pinch
- Salt - to taste
- Macadamia Nuts - 12 pieces
- Dried Apricots - 7 pieces
- Couscous - 1 cup
- Cranberry - 1.8 oz
- Quince - 1 piece
- Lemon - ½ piece
- Antonovka apples - 4 pieces
- Vodka - 1 fl oz
- Raisins - 1 tablespoon
- Red Currant - ½ piece
- English Dry Mustard - 7.8 oz
- Peeled chestnuts - 10 pieces
- Honey - 1 teaspoon
Step by Step guide
Step 1
Thaw the goose, rinse it, and singe the skin.
Step 2
Without damaging the skin, remove the carcass from the body.
Step 3
Rub the prepared carcass with dry mustard (1 handful) and marinate in water mixed with mustard for some time. Leave overnight.
Step 4
Prepare the stuffing. Chop the quince, dried apricots, and chestnuts coarsely.
Step 5
Pour boiling water over the couscous.
Step 6
Chop the chili and cumin. Mix with other ingredients and drizzle with lemon juice.
Step 7
Add vodka and mix well.
Step 8
Stuff the goose and sew up the belly with thick white thread. Spritz with water and place in the oven.
Step 9
Roast for 2 hours at 150–160°C, turning from side to side. 30–40 minutes before the end, take the goose out every 10 minutes and baste with the juices that have formed.
Step 10
Core the apples, stuff with cranberries and raisins, add 1 teaspoon of honey, and sprinkle with sugar.
Step 11
Place in the oven and bake for 10 minutes at 180°C. The apples can be placed next to the finished goose (for the last 10 minutes).
Step 12
Sauté the cabbage in butter. Serve the cabbage alongside the finished goose as a side dish.
