Ingredients
- Yellow Beets - 2 lbs
- Red Wine Vinegar - 3 tablespoons
- Pernod - 1 teaspoon
- Olive Oil - ½ cup
- Balsamic Vinegar - 2 tablespoons
- Romaine lettuce - 10.6 oz
- Chicory - 21.2 oz
Step by Step guide
Step 1
Using a spoon or melon baller, scoop out many small balls from the beets and place them in a bowl. Add 1 tablespoon of wine vinegar, 1 tablespoon of balsamic vinegar, Pernod, and season with salt and pepper to taste. Mix everything well. Let it marinate for 1 hour or overnight.
Step 2
Transfer the marinated beets with a slotted spoon to a serving bowl. Mix the remaining vinegars and olive oil, add the beet marinade, and whisk well.
Step 3
Add the lettuce and chicory leaves to the beets, drizzle with the dressing, and mix well.
