Citrus salad with cheese dressing

Ingredients

  • Eel - 2 pieces
  • Oranges - 4 pieces
  • Tomatoes - 4 pieces
  • Champagne Vinegar - 1 tablespoon
  • Olive Oil - 4 spoons
  • Dijon Mustard - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Roquefort cheese - 3.5 oz

Step by Step guide

Step 1

Separate the heads of lettuce into individual leaves, and segment the orange, removing any membranes if possible. Remove the seeds and liquid from the tomatoes and slice the remaining tomato flesh into thin strips.

Step 2

Add a pinch of salt and mustard to the vinegar and whisk them together. Gradually incorporate the olive oil while continuing to whisk. The result should be a sauce that is fairly uniform in consistency. Crumble in some Roquefort or another blue cheese. Then, mix this sauce with oranges, lettuce, and tomatoes, season with pepper, and serve.
