Description

Under no circumstances should you replace the Romaine leaves with any other type. Their juiciness is half of the authentic flavor of this salad. It is crucial that the leaves are dried very thoroughly. Leaves with water will give an incorrect taste, the water will dilute the dressing, making it watery, and the salad will drown in it. Enjoy your Caesar salad!

Ingredients

  • Romaine lettuce - 1 head
  • Skin-On Chicken Breasts - 2 pieces
  • Parmesan Cheese - 3.5 oz
  • White bread - 8.8 oz
  • Garlic - 3 cloves
  • Large eggs - 1 piece
  • Dijon Mustard - 1 tablespoon
  • Olive Oil - 5 fl oz
  • Salt - a pinch
  • Champagne Vinegar - 2 spoons
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Wash and thoroughly dry the Romaine leaves (!). Tear them into a salad bowl (by hand).

Step 2

Prepare breadcrumbs from white bread. Cut the bread into large cubes, place them in a heated skillet, drizzle with olive oil, and add a couple of crushed garlic cloves for flavor. Fry over medium heat to avoid burning.

Step 3

Wash the chicken fillet. Dry it with a paper towel. Season with spices (just salt and freshly ground pepper are enough). Sear in a hot skillet until golden brown, making sure not to overcook it to prevent the meat from drying out. Remove from heat and make a few shallow cuts across the fillet.

Step 4

Prepare the sauce. Blend together 1 egg, 1 clove of garlic, mustard, olive oil, vinegar, salt, and freshly ground pepper.

Step 5

Place the chicken on the salad leaves, drizzle with the sauce, and mix in the croutons along with thinly sliced Parmesan.
