Description
Classic Cantonese fried rice with chicken and shrimp
Ingredients
- Ground Black Pepper - ¾ teaspoon
- Bouillon cube - 1 piece
- Peeled Cooked Shrimp - 3.5 oz
- Chocolate eggs - 3 pieces
- Frozen green bean pods - 4.6 oz
- Scallions - 2 stalks
- Rice - 10.6 oz
- Vegetable Oil - 2 tablespoons
- Chicken fillet - 5.3 oz
- Soy Sauce - 3 tablespoons
Step by Step guide
Step 1
Rinse the rice, drain the water, and lightly dry it through a sieve. Cook the rice in a slightly less than 2 to 1 ratio. Add to boiling water, cover with a lid, and cook on the lowest heat until all the water is absorbed. During the cooking process, it is highly recommended not to lift the lid.
Step 2
Let the cooked rice cool.
Step 3
Boil the chicken until cooked. Cut into cubes.
Step 4
Finely chop the green onion. Heat the vegetable oil and sauté the onion for 1 minute.
Step 5
Lightly beat the eggs and, stirring constantly, fry them in a pan until a thick mass forms.
Step 6
Add the rice, chicken, and shrimp to the egg mixture. Fry for 5–10 minutes, stirring occasionally.
Step 7
Add the green peas, soy sauce, pepper, and crushed chicken bouillon cube. Stir for another 5–10 minutes.
Step 8
Serve the dish garnished with finely chopped green onion.
