Description
Classic chili con carne
Ingredients
- Bacon - 1.8 oz
- Dried Chili Pepper - 12 pieces
- Beef - 15.9 oz
- Pork Blood - 15.9 oz
- Garlic - 5 cloves
- Onion - 1 head
- Dried Rosemary - 1 tablespoon
- Ground Cumin - 1 tablespoon
- Wheat Flour - 1 tablespoon
- Campbell's Beef Broth - 1½ glasses
- Coarse Salt - to taste
- Red Canned Beans - 28.2 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Place the dried chilies in a bowl and cover with 4 cups of water. Let them soak for thirty minutes. Then, remove them from the liquid, pat dry, and remove the seeds and stems. Put the chilies in a blender, add the soaking water, and blend until smooth. Set aside.
Step 2
In a dry skillet, sauté the bacon slices over medium heat to render the fat. Measure out 2 tablespoons of the fat, pour it into a saucepan, and warm it over medium heat. Add all the meat, cut into 1 cm cubes. Sauté, stirring constantly, until browned, about twelve minutes. Push the meat to the sides of the saucepan, add minced garlic and onion to the center, and sauté until softened, about two minutes. Add oregano, cumin, and flour, mix thoroughly, and cook for about two minutes.
Step 3
Add the chili puree and broth, reduce the heat to medium, and cook covered, stirring occasionally, for about an hour until the meat is tender. Drain the canned beans in a colander and let them drain. Add them to the saucepan, stir, and cook for another four to five minutes. Season with salt and pepper.
