- Ground coriander - 0.4 oz
- Octopus - 2.1 oz
- White Part of Leek - 1.8 oz
- Scallops - 2.1 oz
- Chicken hearts - 1.8 oz
- Soy Sauce - 2 fl oz
- Meyer Lemon Juice - 0 fl oz
- Fresh Mint - 0.4 oz
- Fish Oil - 0 fl oz
- TABASCO® - 0 fl oz
- Frozen squid rings - 2.1 oz
- Yakiniku sauce - 0.4 oz
- Garlic - 0.4 oz
- Tuna - 2.5 oz
Step by Step guide
Step 1
For the marinade, pour half of the soy sauce, add fish sauce and smoked Tabasco.
Step 2
Cut the leek, tuna, squid, and octopus into small pieces. Chicken hearts and scallops can be used whole. Mix everything in the marinade and let it sit for 5 minutes at room temperature. Skewer all the ingredients. Do not discard the remaining marinade; we will need it later.
Step 3
Yakitori is best grilled on a real barbecue or grill. Cook the skewers until golden brown on each side, and a minute before they are done, pour the remaining marinade directly onto the grill. The Japanese prefer to eat them slightly undercooked inside. In Russia, people often ask for the ingredients to be fully cooked.
Step 4
For the sauce, take the remaining soy sauce, add lemon juice and teriyaki. Finely chop the garlic, mint, and cilantro and add them to the sauce.
Step 5
Serve on a bamboo leaf and definitely with a wedge of lemon. After all, seafood and lemon or lime are a perfect match.
