Classic Lobio
Ingredients
- Dried lima beans - 8.8 oz
- Celery stalk - 5.3 oz
- Onion - 1 head
- Garlic - 4 cloves
- Walnuts - 4.4 oz
- Cilantro - 1 bunch
- Vegetable Oil - 1 fl oz
- Black Cumin (Cumin) - to taste
- Khmeli-suneli - a pinch
- Salt - to taste
- Mild Chili Spice - to taste
Step by Step guide
Step 1
Soak the beans overnight or for almost a day in cold water. If soaking for more than overnight, change the water 1–2 times.
Step 2
If the beans are still hard after soaking, cover them with fresh water and boil for about an hour without adding salt. Before boiling, rinse the beans under cold running water.
Step 3
Peel the onion and garlic, removing the green centers from the garlic. Dice the onion and celery, and mince the garlic.
Step 4
In a pot, heat the vegetable oil and sauté the vegetables, stirring occasionally, then add all the spices except for salt. Add a few rings of hot pepper or dry ground hot pepper to taste.
Step 5
Chop the walnuts with a knife and add them to the pot.
Step 6
Add the beans to the pot as well.
Step 7
Pour in enough water to cover the beans and simmer on medium heat for about 1.5 hours.
Step 8
When the beans are completely soft, remove the lobio from the heat. Add chopped cilantro, season the dish with salt to taste, and stir. You can also mash the beans a bit with a potato masher if desired.
Step 9
The lobio is ready. Serve it hot as a main dish or cold as an appetizer.
