Ingredients
- Rice Noodles - 10.6 oz
- Vegetable Oil - 2 spoons
- Skin-On Chicken Breasts - 10.6 oz
- Tofu - 3.5 oz
- Garlic - 2 cloves
- Dried Squid - 2 spoons
- Fish Oil - 4 fl oz
- Sugar Glaze - 1.4 oz
- Tamarind Paste - 2 fl oz
- Chicken Egg - 3 pieces
- Roasted Peanuts - 2.1 oz
- Chopped Green Onions - 3 spoons
- Peanut Sprouts - 3.5 oz
- Lime - 1 piece
Step by Step guide
Step 1
Place the noodles in a bowl and cover them with cold water. Let them sit for about 15 minutes, or until the noodles become soft. Drain the water.
Step 2
Slice the chicken breast and tofu into thin pieces. Heat oil in a wok. Stir-fry the chicken and tofu over high heat for 5 minutes, until the chicken is golden brown.
Step 3
Mix well. Add finely chopped garlic and dried shrimp, and cook for another 2 minutes.
Step 4
In a separate bowl, mix the fish sauce, sugar, tamarind juice, and 125 ml of water. Add the noodles and pour the fish sauce mixture into the skillet. Stir and fry for another 5 minutes.
Step 5
Lightly beat the eggs and pour them into the wok, pushing the noodles to the side of the pan.
Step 6
Cook, stirring, until the eggs turn into an omelet. Add chopped peanuts and roughly chopped green onions. Mix the noodles with the omelet and cook for another 2 minutes. Add the bean sprouts and stir. Serve with lime wedges.
