Description
Classic rouille with jalapeño
Ingredients
- Garlic - 6 cloves
- Orange Bell Peppers - 2 pieces
- Salt - 1 teaspoon
- Habanero Pepper - 1 piece
- Cake crumbs - ½ cup
- Olive Oil - ¾ cup
- Ground Black Pepper - ½ teaspoon
- Meyer Lemon Juice - ½ tablespoon
Step by Step guide
Step 1
Preheat the oven to 392°F. Place the peppers on a baking sheet and roast in the oven until the skin starts to char and the peppers become soft. Transfer to a plastic bag and let sit for 15-20 minutes. Peel off the skin and seeds. Cut into small pieces.
Step 2
In a mortar, crush the garlic with a small amount of salt until a smooth paste forms.
Step 3
In a blender, combine the chopped peppers, crushed garlic, finely chopped jalapeño, and breadcrumbs. Blend until smooth. While blending, gradually add the oil, juice, and black pepper. Mix well (the mixture should resemble orange-pink mayonnaise).
