Classic spaghetti with tomatoes
Ingredients
- Garlic - 2 cloves
- Mild Chili Spice - 1 piece
- Fresh basil leaves - 1.1 oz
- Spaghetti - 10.6 oz
- Olive Oil - 1 fl oz
- Baking Tomatoes - 14.1 oz
- Parmesan Cheese - 2.8 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel the garlic and finely chop it along with the chili pepper (first cut it in half and remove the seeds if you don't want the sauce to be too spicy).
Step 2
Remove the basil leaves from the stems and set aside. Finely chop the stems.
Step 3
Cook the spaghetti in a large pot of boiling salted water according to the package instructions.
Step 4
Meanwhile, place a large saucepan over medium heat and pour in 2 tablespoons of oil. Add the garlic, chili pepper, and basil stems and stir.
Step 5
When the garlic starts to brown slightly, add most of the basil leaves and the tomatoes, crushing them with a spatula. Increase the heat to high and stir for 1 minute. Taste and season with sea salt and black pepper if necessary.
Step 6
Drain the spaghetti, reserving a full cup of the cooking water, then transfer them to the saucepan with the sauce and mix well. If needed, add a little of the reserved pasta water to loosen them, then taste and season with salt and pepper to taste.
Step 7
Serve the pasta on plates or transfer to a large serving dish.
Step 8
Sprinkle with the remaining chopped basil leaves and grated Parmesan.
