Ingredients
- Gooseberry - 2 lbs
- Sugar - 2 lbs
- Walnuts - 17.6 oz
- Star anise - 2 pieces
- Vodka - 1 fl oz
- Meyer Lemon Juice - 0 fl oz
Step by Step guide
Step 1
Prepare royal gooseberry jam. Remove the stems from the gooseberries, slice each berry open on the side, and scoop out the seeds.
Step 2
Place a walnut and a partition from the walnut inside each berry. Prepare a syrup by boiling 1 kilogram of sugar with 500 ml of water. Pour the hot syrup over the berries, add anise, and bring to a boil. Remove from heat and transfer to a sterilized jar. Allow to cool, cover with a lid, and store in the refrigerator.
Step 3
Prepare the cocktail. Pour vodka into a shaker, add lemon juice and 20 ml of royal jam. Shake well and strain into a chilled glass.
