Coconut Eggnog
Ingredients
- Whole egg - 8 pieces
- Dark rum - 8 teaspoons
- Coconut Milk - 4 glasses
- Sugar - 6 teaspoons
- Vanilla extract - 2 spoons
- Ground Nutmeg - ½ spoons
- Ground Cinnamon - ¼ spoons
- Whipped Cream - 2 fl oz
Step by Step guide
Step 1
In a large pot, pour in coconut milk (or coconut cream), add sugar, and place over medium heat. Stirring frequently, heat the mixture until it's hot but do not bring it to a boil.
Step 2
In a large bowl, vigorously beat the egg yolks with vanilla essence.
Step 3
Pour half of the coconut milk into the egg mixture, continuing to whisk vigorously. Then add the remaining coconut milk and mix thoroughly with the whisk.
Step 4
Pour the egg-coconut mixture back into the saucepan and place it over low heat. Continuously whisking, bring it almost to a boil, then immediately remove from the heat.
Step 5
While continuously whisking, bring the liquid to a creamy consistency.
Step 6
Pour the eggnog into a large clean bowl and let it cool to room temperature.
Step 7
Add dark rum to the eggnog, mix thoroughly, cover with plastic wrap, and refrigerate for at least 3 hours (preferably overnight).
Step 8
Before serving, pour the eggnog into glasses, garnish with whipped cream, and sprinkle with a mixture of cinnamon and nutmeg.
