Ingredients
- Grapeseed Oil - 2 spoons
- Onion - 1 head
- Balsamic Vinegar - 2 spoons
- Baking Tomatoes - 1½ kg
- Water - 1 glass
- Cod - 5 lbs
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Pitted Wild Apricots - 12.3 oz
- Fresh Rose Hips - 4 stalks
- Olive Oil - to taste
Step by Step guide
Step 1
Thinly slice the onion into half-moons — you should have 1 cup. In a blender, puree the canned tomatoes until smooth — about 6 cups. Cut the fish into medium-sized pieces. Chop each piece of prunes into thirds.
Step 2
Heat the grapeseed oil in a large skillet over medium heat. Add the onion and sauté until translucent, about 6 minutes. Pour in the vinegar and cook for another 30 seconds. Then add the tomato paste and water. Bring to a boil.
Step 3
Season the fish with salt and pepper. Place it in the sauce along with the prunes and rosemary. Cover with a lid and cook for about 12-15 minutes until the fish is cooked through.
Step 4
Serve drizzled with olive oil and sprinkled with freshly ground black pepper.
