Ingredients
- Cod fillet - 2 lbs
- Daikon - 10.6 oz
- Cauliflower - 10.6 oz
- Butter - 3.5 oz
- Dill - 0.7 oz
- Cod roe - 1.8 oz
- Chicken Broth - 17 fl oz
- Shallot - 2 pieces
- Garlic - 2 cloves
- 10% cream - 3 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Dry White Wine - 3 fl oz
Step by Step guide
Step 1
Finely chop the shallots and garlic, then lightly sauté them in a small amount of butter (about 10 g). Add white wine and cook over high heat until the wine has reduced by about half.
Step 2
Add chicken, fish, or vegetable broth, bring to a boil, and cook the cod fillets in it for seven minutes. Remove the fish and place it in a warm spot, strain the broth, add cream, and cook until it thickens. Then fold in the caviar, season with salt and pepper if needed.
Step 3
Using a mandoline or a knife, slice the radish and cauliflower into thin slices. Arrange the fish on a plate, top it with the cauliflower and radish, drizzle with sauce, and garnish with dill.
