Ingredients
- Cod fillet - 28.2 oz
- Muscat Wine - 3 fl oz
- Olive Oil - 2 tablespoons
- Butter - 1.8 oz
- Tomatoes - 2 pieces
- Scallions - 0.7 oz
- Basil - 0.7 oz
- Thyme - to taste
- Meyer Lemon Juice - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the cod fillet by removing all bones, cutting it into 200 g pieces, and seasoning with salt and pepper. Heat 1 tablespoon of olive oil in a skillet. Sear the cod on both sides. Transfer to a baking dish and place in a preheated oven at 392°F for 10 minutes.
Step 2
In the skillet where the fish was cooked, pour in the wine and let it evaporate. Add the butter and a couple of sprigs of thyme. Simmer for about 5 minutes. Once the sauce is ready, strain it.
Step 3
Blanch the tomatoes and cut them into wedges. Finely chop the basil and green onion (you can add dill if desired). Combine the tomatoes and herbs, add lemon juice, olive oil, salt to taste, and mix well.
Step 4
Plate the fish and salad, drizzling the sauce over the fish. Garnish with basil or sprigs of thyme.
