Cod with Quinoa and Kiwi Salsa
Ingredients
- Quinoa - 1 cup
- Vinegar essence - ½ cup
- Chili Flakes - ½ teaspoon
- Coarse Salt - to taste
- Agave Syrup - 1 tablespoon
- Kiwi - 6 pieces
- Scallions - 1 bunch
- Cod fillet - 4 pieces
- Black Bean Paste - 2 tablespoons
- Cilantro - to taste
Step by Step guide
Step 1
Cook the quinoa in boiling water until ready.
Step 2
Peel the kiwi, cut it lengthwise into 4 pieces, and slice thinly.
Step 3
Meanwhile, in a small bowl, mix the vinegar, agave syrup, red pepper flakes, and a little salt. Add the kiwi and finely chopped green onion, stir, and let sit for 20 minutes.
Step 4
Preheat the grill in the oven.
Step 5
Brush the fish fillets with curry paste and place them on a baking sheet lined with foil. Grill until cooked, about 8–10 minutes.
Step 6
Serve the fish with quinoa, salsa, and garnish with cilantro sprigs.
