Ingredients
- Beef Tri-Tip - 1⅕ kg
- Butter - 4 spoons
- Garlic - 8 cloves
- Onion - 1 head
- Instant coffee - 7 fl oz
- Soy Sauce - 7 fl oz
- Champagne Vinegar - 3 spoons
- Worcestershire Sauce - ¼ glasses
- Chili Flakes - 1 tablespoon
- Dried Rosemary - ½ spoons
- Coarse Salt - to taste
Step by Step guide
Step 1
In a skillet, melt the butter. Add the chopped garlic and onion, and caramelize for twelve to fifteen minutes, then transfer to a bowl. Pour in the coffee, both sauces, vinegar, and add chili, oregano, and salt. Fill a glass with the resulting marinade, and place the steak in the bowl with the remaining mixture, cover with plastic wrap, and refrigerate overnight.
Step 2
Grill the meat until it develops a golden-brown crust, flipping it once. Baste the meat with the remaining marinade while grilling (a basting brush works well for this). Transfer the finished steak to a cutting board, let it rest for ten minutes, and slice it with a sharp knife.
