Description

Not just lemonade, but a refreshing blend of coffee and tea. Infused with tangerines and lime juice. This is how it's made at a popular coffee chain.

Ingredients

  • Ground Coffee - 1.6 oz
  • Fructose - 0.8 oz
  • Mandarins - 1.8 oz
  • Black tea - 0.2 oz
  • Ice - 6.3 oz
  • Lime Juice - 0 fl oz

Step by Step guide

Step 1

First, we prepare the coffee base: brew coffee using the French press method (for this drink, we use coffee from Ethiopia). To do this, grind 45 grams of coffee (coarse grind) for 500 grams of hot water (96°C). Let it steep for 4 minutes, then press the plunger down slowly for 20 seconds, so that the coffee grounds do not float to the surface. Now, filter the coffee using a paper filter; this will best filter the coffee and remove any fine particles (the small coffee particles will continue to brew and may make the coffee bitter). I recommend using a ceramic dripper with a Hario paper filter for this process.

Step 2

Add 23 grams of fructose to the filtered coffee and mix thoroughly (this will enhance the berry notes). Now, place the coffee in the refrigerator to cool. It can be stored in a regular glass jar and will keep for up to 7 days.

Step 3

Now we prepare a tea infusion for the lemonade: in a glass jar, place 50 grams of tangerines and muddle them to release their juice. Add 5 grams of Earl Grey tea (regular tea can also be used) to the same jar. Pour in 260 grams of hot water (96°C). Cover with a lid, leaving a small gap for steam to escape. Allow it to cool to room temperature. After that, place it in the refrigerator for 24 hours. After 24 hours, take the jar out of the fridge and strain through a fine sieve. The infusion is ready. It can also be stored for 7 days.

Step 4

Now let's prepare the lemonade: add ice cubes (about 160-180 grams), 160 grams of chilled black coffee, 30 grams of tea infusion, and 3 grams (1 teaspoon) of lime juice. Combine all these ingredients in a tall glass with a capacity of 350-400 ml and mix them thoroughly.

Step 5

You can add more lime juice to taste if you enjoy 'sours' (sweet and sour cocktails).
