Coffee-Marinated Pork Tenderloin with Coffee-Pepper Crust
Ingredients
- Ground Coffee - 4 fl oz
- Apple Cider Vinegar - 1 fl oz
- Yellow Mustard Seeds - 0 fl oz
- Black Pomegranate Molasses - 0 fl oz
- Pork tenderloin - 2 lbs
- Ground Coffee - 1.1 oz
- Sugar - 1.1 oz
- Paprika - 1.1 oz
- Ground Black Pepper - 1.1 oz
- Coarse Salt - 0.3 oz
- Barbecue sauce - 2 fl oz
Step by Step guide
Step 1
In a plastic bag, mix black coffee, 30 ml of vinegar, mustard, and molasses. Add the meat, mix well, seal the bag tightly, and refrigerate for 2 to 12 hours, turning occasionally.
Step 2
Preheat the grill or barbecue.
Step 3
In a bowl, combine ground coffee, sugar, paprika, black pepper, and salt. Remove the meat from the marinade and rub it with the coffee mixture. Let it sit for 15 minutes at room temperature.
Step 4
In a bowl, mix barbecue sauce with the remaining 15 ml of apple cider vinegar. Transfer 30 ml of the prepared sauce to a small bowl.
Step 5
Place the meat on an oiled grill and sear on all sides for 3 minutes. Move the meat to a cooler side of the grill and cook for another 15 minutes, turning occasionally.
Step 6
Brush the meat with 45 ml of barbecue sauce and grill for another 5 minutes, turning, until cooked through.
Step 7
Transfer the meat to a plate, brush with the remaining barbecue sauce, cover with foil, and let it rest for 5 minutes.
