Cold Rice Salad
Ingredients
- Malt Vinegar - 2 tablespoons
- Chicken Egg - 1 piece
- Rice - 10.6 oz
- Tomatoes - 26.5 oz
- Fresh Mushrooms - 8.8 oz
- Lemon - ½ piece
- Parsley - 1.4 oz
- Olive Oil - 6 tablespoons
- Salt - to taste
Step by Step guide
Step 1
Cook the rice in boiling water for 10–15 minutes, then rinse in a colander under cold water. Leave to drain.
Step 2
Place the tomatoes in a sieve, sprinkle with salt, and let excess juice drain.
Step 3
Put the mushrooms in a bowl, add lemon juice, and mix well.
Step 4
Transfer the rice to a large salad bowl, add the tomatoes, mushrooms, pepper, and parsley.
Step 5
Mix together the vinegar and oil, and add salt.
Step 6
Pour the dressing over the salad and mix well. Before serving, sprinkle the salad with crumbled boiled egg. The salad can be served in a salad bowl or on a plate, garnished with lettuce leaves.
