Cold Zucchini and Tomato Salad
Ingredients
- Courgette - 3 pieces
- Tomatoes - 4 pieces
- Onion - 2 heads
- Dill - 0 oz
- Vegetable Oil - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Wash the young, small zucchini, cut into rings 0.5 cm thick, place in a bowl, sprinkle with salt, and let sit for 15 minutes.
Step 3
Drain the liquid released from the zucchini and dry them with paper towels.
Step 4
Heat vegetable oil in a pan and fry the zucchini on both sides until golden brown.
Step 5
Peel the onion and cut it into half-rings, or into quarter-rings if the onion is large. If the onion is too sharp, soak it in cold water. Try not to separate the onion layers.
Step 6
Wash the tomatoes, dry them, cut them in half lengthwise, remove the stem, and slice into thin half-rings.
Step 7
Wash the dill, dry it, remove the thick stems, and chop finely.
Step 8
Everything is ready for assembling the salad. Layer the zucchini in a deep bowl with a flat bottom or a ceramic dish, overlapping like roof tiles.
Step 9
On top of the zucchini, add a layer of sliced onion. Next, add a layer of tomatoes in the same manner as the zucchini. Season with salt and pepper.
Step 10
Sprinkle with dill.

Repeat the layers as many times as the height of the bowl allows. After assembling, you can gently press the salad down, then refrigerate for at least 2 hours.

Serve cold with toast.
