Ingredients
- Salt - to taste
- Butter - 1.4 oz
- Paprika - ½ teaspoon
- Wheat Flour - 1 tablespoon
- Olive Oil - 4 tablespoons
- Long-Grain Rice - 14.1 oz
- Garlic - 2 cloves
- Bay leaf - 1 piece
- Onion - 1 piece
- Beans - 14.1 oz
Step by Step guide
Step 1
Soak the beans in cold water overnight or for at least 3 hours. Then rinse under cold water. Place in a pot, cover with water, and bring to a boil over low heat. Remove the pot from the heat and drain the water. Place the beans in a clean pot, add cold water to cover all the beans. Add half an onion, the bay leaf, and one of the garlic cloves. Cook over low heat for 30 minutes, then add 250 ml of cold water, bring to a boil again, and cook for another 30 minutes. Repeat this process two more times. The total cooking time should be 2 to 2 ½ hours: the beans should be soft.
Step 2
Cook the rice: bring a pot of unsalted water to a boil. Add the rice, stir with a wooden spoon, and cook over high heat for 12-15 minutes until the rice is soft. Drain the rice in a large colander and rinse well under cold water. Set aside.
Step 3
Finely chop the remaining half of the onion and crush the garlic. Heat the olive oil in a pan, add the onion and garlic, and cook over low heat, stirring, for about 8 minutes until the onion is brown. Stir in the paprika and 3-4 tablespoons of the broth from the beans. Add the mixture to the pot with the beans and salt to taste.
Step 4
Melt the butter in another pot, add the rice, salt, and heat, stirring with a wooden spatula. Transfer the rice to a round mold, invert it onto a deep serving plate, and place the beans in the center. Serve immediately.
