  • Corn on the cob - 4 pieces
  • Salt - to taste
  • Zucchini - 4 pieces
  • Zucchini flowers - 10 pieces
  • Basil - 0.6 oz
  • Chopped Parsley - ¼ cup
  • Olive Oil - ⅓ cup
  • White Wine Vinegar - ¼ cup
  • Red pepper flakes - ½ teaspoon
  • Ground Black Pepper - to taste
  • Feta cheese - 1.8 oz

Step by Step guide

Step 1

To prepare the corn and zucchini salad, boil the corn in a large pot of salted boiling water until it turns bright yellow and tender (about 3 minutes), then transfer to a plate and let it cool.

Step 2

Remove the corn kernels from the cob and place them in a large bowl, add the zucchini, flowers, basil, parsley, oil, vinegar, and red pepper flakes, and mix well. Season with salt and black pepper. Top with feta cheese, then serve.
