Ingredients
- Eggplants - 5 pieces
- Tomatoes - 7 pieces
- Orange Bell Peppers - 2 pieces
- Garlic - 3 cloves
- Cilantro - 4 bunches
- Ocean salt - 1 tablespoon
- Ground Black Pepper - 1½ teaspoons

Step 1
Prepare the grill and let the coals heat up.
Step 2
Skewer the eggplants, tomatoes, and bell peppers. Place them on the grill for about 20 minutes, until cooked (doneness is determined by the softness of the vegetables, and don’t be afraid of well-charred skins on the tomatoes).
Step 3
While the grilled vegetables are cooking, finely chop the garlic and cilantro.
Step 4
Remove the cooked vegetables from the fire, wait a bit for them to cool, wash your hands thoroughly, and mash them into a puree.
Step 5
Add the cilantro, garlic, salt, and pepper, and mix once more.
