Ingredients
- Couscous - 3.5 oz
- Turnips - 2 pieces
- Scallions - 2 stalks
- Courgette - 1 piece
- Salt - to taste
- Vegetable Oil - 1 fl oz
- Tomatoes - 3 pieces
- Onion - ½ head
- Pistachios - 2 tablespoons
Step by Step guide
Step 1
Prepare the couscous: pour 2 tablespoons of oil into a skillet and add the couscous. Stir for 3 minutes and add boiling water so that the water is 3-4 cm above the level of the couscous.
Step 2
Keep it on low heat for about 5 minutes, stirring occasionally, until the water evaporates. Then turn off the heat, cover with a lid, and let it sit for 20 minutes.
Step 3
In another skillet, pour in the remaining oil, add finely chopped onion, and sauté until golden brown.
Step 4
Then add grated carrots, and after about 5 minutes, add the grated zucchini or diced zucchini, and stir.
Step 5
Pour boiling water over the tomatoes, peel them, and chop them into small cubes.
Step 6
Mix everything together and add the chopped green onions.
Step 7
Then combine the couscous with the vegetables.
Step 8
Add spices to taste. I added basil and ground coriander, along with the pine nuts.
