Ingredients
- Couscous - 8.8 oz
- Orange Bell Peppers - 1 piece
- Dried Apricots - 4.2 oz
- Raisins - 4.2 oz
- Olives stuffed with lemon - 2.1 oz
- Chopped almonds - 2.1 oz
- Courgette - ½ piece
- Pistachios - 2.1 oz
- Olive Oil - 2 tablespoons
- Fresh Mint - 1.1 oz
- Meyer Lemon Juice - 2 tablespoons
Step by Step guide
Step 1
Place the couscous in a heatproof dish. Pour boiling water over it so that the water covers the couscous by 2.5 cm. Leave for 15 minutes; the couscous should absorb all the water. After that, fluff the couscous gently with a fork.
Step 2
Remove the pits from the bell pepper, cucumber, and olives, and cut everything into small cubes. Cut the dried apricots in the same way. Transfer everything to the dish with the couscous, and add the raisins, almonds, and pine nuts.
Step 3
In a separate bowl, mix the oil, lemon juice, and finely chopped mint. Dress the couscous with the resulting mixture, and season with salt and pepper. Serve warm or cooled to room temperature.
