Description

Couscous with pomegranate seeds, pine nuts, raisins, and yogurt

Ingredients

  • Couscous - 7.1 oz
  • Cinnamon - 1 tablespoon
  • Raw cane sugar - 1.8 oz
  • Lemon - 1 piece
  • Pistachios - 0.7 oz
  • Pomegranate Seeds - 1 piece
  • Raisins - 1.8 oz
  • Ghee - 1.8 oz
  • Yogurt powder - 17.6 oz
  • Fresh Mint - 0.7 oz

Step by Step guide

Step 1

Rub the melted butter into the couscous with your hands. You can use any technique you prefer: either rub the couscous with the butter between your palms or between your thumb and index finger—whichever is more comfortable for you. Transfer the couscous to a deep, large plate with a flat bottom.

Step 2

Dissolve sugar, lemon juice, and cinnamon in boiling water, then pour this mixture over the couscous. Cover the bowl with a lid and let the couscous soak up the liquid. This is not the most traditional, but the simplest way to prepare couscous. You can also steam couscous in a steamer if you have one suitable for it, or buy a special couscous pot. Alternatively, you can use a fine cheesecloth by placing the couscous on it in a regular steamer.

Step 3

Remove the seeds from the pomegranate, lightly toast the pine nuts and raisins in melted butter.

Step 4

Mix the pomegranate, nuts, finely chopped mint, and raisins with the couscous and yogurt.
