Couscous with Vegetables and Herbs
Ingredients
- Couscous - 1 cup
- Boiling water - 1½ cups
- Arugula - 5 stems
- Ramiro Pepper - ½ piece
- Sun-Dried Tomatoes - 4 pieces
- Soy Sauce - 1 tablespoon
- Olive Oil - 1 teaspoon
- Mixed Ground Peppers - to taste
- Sumac - ½ teaspoon
Step by Step guide
Step 1
Pour the couscous into a deep bowl. Add the mixed peppers and salt.
Step 2
Add sumac.
Step 3
Pour boiling water over it.
Step 4
Cover with a lid or plate and let it sit for 5 minutes.
Step 5
Finely chop the arugula.
Step 6
Dice the ramiro pepper into small cubes.
Step 7
Fluff the couscous vigorously with a fork.
Step 8
Add soy sauce and stir immediately.
Step 9
Drizzle with olive oil, add ramiro pepper and finely chopped sun-dried tomatoes.
Step 10
Add the herbs.
Step 11
Mix and serve.
