Description
If you use sufficiently fatty cream, you can replace the extract with strong meat broth at 1/3 the volume of the cream and add a teaspoon of flour for thickness.

- Cream - 8 fl oz
- Meat Extract - ½ teaspoon

Step 1
Mix the cream with the extract in a heatproof dish. Place it in a larger pot filled with gently simmering water: the sauce needs to be warmed, but should not boil. If it seems too thin, whisk it until the desired consistency is reached.
Step 2
Serve in a warmed sauceboat. This sauce pairs very well with meat fillet.
