Creamy Pasta with Vodka
Ingredients
- Olive Oil - 1 tablespoon
- Butter - 1 tablespoon
- Garlic - 2 cloves
- Shallot - 2 pieces
- Vodka - 1 cup
- Chicken Broth - 1 cup
- Baking Tomatoes - 31.7 oz
- Coarse Salt - to taste
- Ground Black Pepper - to taste
- Penne rigate - 15.9 oz
- Fresh basil leaves - 20 pieces
- Cream - ½ cup
Step by Step guide
Step 1
Heat a large skillet well and add olive oil and butter, finely chopped shallots, and minced garlic. Sauté for 3–5 minutes. Add vodka and cook until reduced by half, about 2–3 minutes. Then add chicken broth and tomatoes. Bring the sauce to a boil, reduce the heat, and add salt and pepper.
Step 2
While the sauce is boiling, cook the pasta in salted boiling water until al dente.
Step 3
Stir the cream into the sauce, bring back to a boil, and remove from heat. Drain the pasta and toss it with the hot sauce and chopped basil leaves.
