- Milk - 10 fl oz
- Cream - 10 fl oz
- Sugar - 3.5 oz
- Starch film - 0.5 oz
- Whole egg - 2 pieces
- Butter - 0.5 oz
- Vanilla Pod - 1 piece
Step by Step guide
Step 1
In one bowl, combine the starch, sugar, and egg yolks. In another, bring the milk and cream with vanilla to a boil (split the vanilla pod and add the seeds to the milk first, then the rest of the pod).
Step 2
Then pour a little hot milk into the starch mixture — it's important for the temperatures of the liquids to equalize; one cannot be cold while the other is hot. Finally, cook the sauce like a jelly: add the mixture of egg yolks and starch to the hot milk and stir.
Step 3
Remove the vanilla pod. At the very end, add the butter and stir well.
